Easy Lemon Garlic Grilled Kokanee

Fresh Kokanee doesn't need much to shine. This simple lemon-garlic grilled Kokanee recipe highlights the fish's delicate flavor while keeping it moist, tender, and flaky. Grilling the fillets on a sheet of foil with butter, lemon pepper, and garlic locks in moisture and makes cleanup quick and easy.

Best of all, dinner is ready in less than 15 minutes. Whether you're cooking a fresh catch from the lake or sharing a family fish fry, this recipe is a foolproof way to enjoy Kokanee at its best.

Ingredients:

  • 2–4 Kokanee fillets, scaled and pin bones removed
  • 3–4 tablespoons butter, cut into thin slices
  • 1–2 teaspoons lemon pepper seasoning
  • 1 teaspoon minced garlic, or ½ teaspoon garlic powder
  • 1 fresh lemon, cut into wedges for serving
  • Optional: A pinch of Old Bay or Johnny's Seafood Seasoning for extra flavor 

Instructions:

  1. Preheat the Grill Set your grill to medium heat, approximately 350°F to 380°F.
  2. Prepare the Foil Tear off a large sheet of heavy-duty aluminum foil. Fold up the edges slightly to create a shallow moat that will keep the butter from running off during cooking. Lightly coat the foil with non-stick cooking spray.
  3. Season the Fish Place the Kokanee fillets skin-side down on the foil. Distribute the butter slices evenly across the fillets, then sprinkle with lemon pepper, garlic, and any additional seasonings you prefer.
  4. Grill Place the foil directly on the grill grates and close the lid. Cook for 5–7 minutes, depending on the thickness of the fillets.
  5. Check for Doneness The fish is ready when it turns opaque throughout and flakes easily with a fork. Avoid overcooking, as Kokanee can dry out quickly.
  6. Serve Carefully remove the foil from the grill using a spatula. Use a fork to separate the meat from the skin, finish with a squeeze of fresh lemon, and serve alongside rice, grilled vegetables, or your favorite summer side dishes. 

Pro Tip: Freshly caught Kokanee has a naturally mild, delicate flavor. A simple combination of butter, lemon, and garlic enhances the fish without overpowering it. If you're looking for a little extra kick, add a light dusting of Old Bay or Johnny's Seafood Seasoning before grilling.
